The ingredients needed to prepare Spiced Pickled Lemon:

  1. You need of Unwaxed lemon - cut in halves or quarters.
  2. Prepare 3 Tbs of sea salt or more.
  3. Prepare 1 Tbs of granulated sugar.
  4. Use of Chilli flakes (optional).

Steps to make Spiced Pickled Lemon:

  1. Wash and cut the lemon either in quarters or halves..
  2. Generously cover all the open sides of the cut lemon pieces with salt..
  3. Using a kilner or any other sealed jar carefully arrange the lemon inside..
  4. Sprinkle with sugar followed by the chilli flakes if using..
  5. Carefully press the lemon in the jar keeping them tight inside. Don't worry as they will slowly sit nicely in the jar once left to pickle..
  6. Clip on the jar and cover. Leave to pickle on the table top..
  7. Every other day gently move the jar in order to allow overall mixing and pickling..
  8. Enjoy after a few weeks..
